Vegan (or not) zucchini bread!

Just made this lovely easy bread, and wanted to share:





You'll need:

1.5 c all-purpose flour
1 tsp ground cinnamon
1/2 tsp baking soda
1/2 tsp salt
1/4 tsp baking powder
1/4 tsp ground nutmeg

1 "egg" via egg replacer (or one beaten egg)
1 c sugar
1 c finely shredded, unpeeled zucchini
1/4 c cooking oil (I used safflower)

To prep, grease the bottom and sides of a baking/bread pan, roughly 8x4x2 inches. Set aside. You may want to consider flouring the bottom of the pan--my bread stuck a bit, even though I'd greased the pan pretty liberally. Not a big deal, but there is a bit of crust missing on the bottom.

Then:

1. In a bowl, combine the flour, cinnamon, baking soda, salt, baking powder, and nutmeg.

2. In a separate bowl, combine the egg substitute, sugar, zucchini, and oil. Mix, then add to the flour mixture. Stir until moistened (batter should be lumpy, not elastic.)

3. Pour batter into pan, then bake at 350 F for 50-60 minutes. Cool, remove from pan, then cool some more. I generally wrap bread in a paper towel and foil for storage, which seems to work pretty well.

4. Devour and enjoy!! I just tried it with some coconut spread, and it's fantastic.
